Coincidentally just happened to watch that show, and Hellmuth seemed to be in a "trapping" phase, where he played most big hands slow, limping with big pocket pairs and betting post-flop like he did here. On a different episode around the same time, while bitterly complaining about trying to trap Antonio Esfandiari for months, someone sarcastically asked, "How's that been working for you?", to which Phil could only respond, "Not too well," but kept rationalizing it as going to pay off eventually with a big pot to make up for all of the little losses that often made him play short stack on the show.
